A Pancake By Any Other Name…

I used to make pancakes by the batch (even for myself alone), and then have to refrigerate or freeze the remainders for another day. While there’s absolutely nothing wrong with that, I have come to delight in a freshly-made, single serving pancake variation that is actually flourless!


So this morning let me share with you this amazingly simple and easy to prepare version of a pancake for one. It’s simple, yet very nourishing. So here we go!


Ingredients:

  • 2 small bananas (or 1 large one), mashed

  • 2 eggs (I use a brand that comes from grain- and grass-fed chickens)

  • 4 tbsp ground flax

  • honey to taste (optional)

  • cinnamon (or spice of your choice) to taste

  • cream cheese (I use Philadelphia Original) or yogurt for topping

  • fresh fruit of your choice for topping (today I used blueberries)







Method:

  • Mash your bananas (I have found that this is easiest using a small cutting board and a fork)

  • Beat eggs in a mixing bowl

  • Add mashed bananas and mix well

  • Measure ground flax into this mixture

  • Add your chosen flavourings and mix well













It should look like this…

  • Put about 1/2 tbsp of oil into an oven-safe skillet (I use a stainless steel skillet and virgin coconut oil)

  • Heat at medium until the oil is hot

  • Preheat your oven on broil at about 175 C (347 F)

  • Spread the oil evenly over the inside of the skillet

  • Pour your mixture into the skillet and reduce heat to medium/low

  • Cook for about 3 minutes, or until the bottom of the pancake is set and it’s beginning to cook through

  • Transfer your skillet to the oven

  • Broil for about 10 minutes, or until the top is cooked

  • Plate your pancake, add toppings and enjoy!
