Do You Bake Your Eggs?
2-Egg Baked Omelette

Ingredients

2 eggs
¼ cup milk
1 small yellow onion (finely chopped)
4 small portobello mushrooms
1 small tomato
Cheddar cheese (cubed or shredded)
Salt and pepper to taste
Preparation
Preheat oven to 350F.
Oil baking dish. Make sure the entire inside of a medium sized baking dish or cast iron skillet is well oiled.

Chop vegetables. Finely chop onion, mushrooms, tomato and cheddar cheese. Set aside in a bowl.


Beat eggs. Beat eggs, milk, salt and pepper in a bowl or measuring cup. Feel free to add any other seasonings of your choice.

Add vegetables. Add your chopped ingredients to the egg mixture and stir well.
Pour mixture into baking dish. Make sure not to overfill your dish.
Bake your omelette. Bake for about 40 minutes, or until eggs are cooked to your desired firmness.
Enjoy! This omelette works well on its own, or paired with your favourite carb.

Tips
For cooking and baking, be sure to use an oil that will remain stable at high temperatures. My favourite choices are virgin cold-pressed oils, especially coconut or avocado oil.
Baking times may vary based on your oven, so it’s a good idea to check for readiness at reasonable intervals when making a new recipe.

Free range eggs
Whole milk from grass fed cows
Vegetarian cheddar cheese.
