Freshly Baked Bread For Breakfast?

In my continued efforts for variety in my breakfast menu, this morning I made one of my air fryer wonders - a single serving gluten free air fryer bread that makes a beautiful sandwich!


The great thing about this is the fact that you can have fresh bread for your meal, and nothing to waste. And if (like me) you get bored of eating leftovers, then the single serving solves that little problem.


The recipe is simple, easy, and turns out great!


Ingredients:

  • 4 tbsp gluten free flour (I use Bob’s Red Mill Gluten Free 1 to 1 Baking Flour)

  • 1/4 tsp xanthan gum (if, unlike mine, your flour doesn’t already have it included)

  • 2 tbsp golden ground flax

  • 1 tsp baking powder

  • pinch of salt

  • 2 tbsp full cream yogurt (I use Guiltless Full Cream Yogurt)

  • white of 1 egg (save the yolk for glazing your bread, and maybe for your fried egg filling)

Method:

  • Measure all ingredients into a mixing bowl

  • Use a spoon to mix well and bring the dough together into a ball


  • Cover and let it rest for about 15 minutes

  • Use floured hands to form the dough into a smooth ball and flatten it to about 1/4 inch thickness

  • Add a few drops of water to the egg yolk and brush over the top as glaze

  • Air fry at 320 F for 12 minutes, flipping it halfway through

  • Cut open and fill with your favourite filling (I used fried egg with mozzarella)


Takes about an hour to prepare this tasty breakfast… but you so deserve it!
