Rice For Breakfast?
Not processed rice cereal of course! But homemade good old rice porridge… a favourite of mine since childhood.
This morning I treated myself to this long-time comfort food that I enjoyed so much while growing up. A simple easy recipe that tastes so yummy!
Ingredients:
3/8 cup basmati rice (you may also use jasmine rice)
about 2 cups water
1 cinnamon stick (you may also use cardamom if that’s your preference)
1 cup of milk of your choice (I used fresh pasteurised goat’s milk)
sweetener of your choice, to taste
fresh fruit of your choice for topping (I used blueberries and banana today)
Method:
Measure your rice into a bowl
Rinse just once (we want to retain some of the starch to give our porridge more body)
Cover rice with tap water and leave to soak for at least 20 minutes (this softens the grains for quicker cooking)
Measure water into a pot (I always use stainless steel - it’s the safer choice)
Drop your cinnamon stick or cardamom pods into the water

Bring water to a boil
Drain your soaked rice and add it to the boiling water

Lower heat and simmer for 15 minutes (the rice should be soft and most of the water cooked away)
Remove the cinnamon stick
Add milk and bring to the boil
Lower heat and cook until porridge thickens (you will need to stir frequently to avoid sticking)
Remove from the stove and add your sweetener
Spoon porridge into a bowl, top with fruit and savour that taste!
